Why this is trending now (updated October 7, 2026)
On September 21, 2026, oHy announced that its hydrogen sparkling water is launching at more than 800 Target stores nationwide. Trade press called it the first hydrogen beverage sold at the retailer (PR Newswire; Mass Market Retailers).
So far more shoppers now see hydrogen water next to seltzer for the first time. The obvious question follows. Does the hydrogen survive the trip from factory to fridge to glass?
Key findings: the 5 honest facts
- Hydrogen is the active ingredient. Not the fizz, the flavor or the pH. A 2022 review names molecular hydrogen as the agent behind the effects seen in studies.
- Water holds very little of it. About 1.6 mg/L is the ceiling at normal room conditions.
- Hydrogen escapes quickly once opened. The minutes between opening and drinking matter more than the brand name.
- Labels often skip the number. The oHy launch release, for example, does not state a hydrogen concentration.
- Fresh beats stored. Making hydrogen water right before you drink removes the shelf-life question entirely.
What is canned hydrogen water?
Canned hydrogen water is drinking water with extra molecular hydrogen (H2) dissolved in it. A factory seals it in a can or pouch. Molecular hydrogen is two hydrogen atoms bonded together. It is a tasteless, odorless gas.
The amount is tiny. Brands report it in ppm (parts per million) or ppb (parts per billion). For water, 1 ppm equals 1 mg/L, and 1,000 ppb equals 1 ppm.
Hydrogen water is not new. It has been sold in Japan and Korea for years, in pouches and from home machines. What changed this fall is reach. A canned version now sits in a major US chain, so far more people are asking whether it works. Our hydrogen water guides cover the basics in more depth.
How much hydrogen can a can actually hold?
Less than most people assume. A 2022 review in the International Journal of Molecular Sciences sets the limit. Hydrogen dissolves in water up to 0.8 mM, or 1.6 mg/L, at standard room temperature and pressure (LeBaron et al., 2022).
That is the ceiling in an open glass at sea level. A sealed container can hold hydrogen while it stays sealed. But hydrogen is the smallest molecule there is. It can slip through seals and many plastics over time, so packaging and storage time both matter.
The real question is not what went into the can. It is what is left when you drink. And that number is often missing from canned hydrogen water labels.
Study box: what level did a clinical trial use?
Sim et al., 2020, Scientific Reports. A randomized, double-blind, controlled trial with 38 healthy adults aged 20 to 59. One group drank hydrogen water at about 0.753 mg/L for 4 weeks. The other drank plain water.
The hydrogen group showed less apoptosis (programmed cell death) in blood immune cells. Inflammation-related signaling was also lower than in the plain water group (Sim et al., 2020). This was a small trial in healthy people. It does not show that hydrogen water treats any disease.
What happens to hydrogen after you open the can?
It starts leaving. Air contains almost no hydrogen, so dissolved hydrogen moves out of the water toward the air. Pouring, shaking and warm temperatures speed this up.
The same 2022 review describes hydrogen as a gas that dissipates readily from water. In one study it cites, effects appeared only with water that still held its hydrogen, not with degassed water (LeBaron et al., 2022).
So timing matters. Picture a can bought weeks ago, poured into a glass and sipped over an hour. That is a very different drink from water charged minutes ago.
Is hydrogen sparkling water the same as hydrogen water?
Not quite. All hydrogen water contains dissolved H2. Hydrogen sparkling water adds carbonation and flavor on top. The fizz you see comes mostly from carbon dioxide, so bubbles say nothing about the hydrogen level.
How does the hydrogen get in? The oHy release says it combines purified water, organic flavors and magnesium to create molecular hydrogen. Elemental magnesium reacts with water to make hydrogen gas and magnesium hydroxide. The 2022 review gives the reaction as Mg + 2H2O → H2 + Mg(OH)2 (LeBaron et al., 2022).
That chemistry is real and well studied. Still, the release does not list a concentration. If you want to compare products, you need that number and the conditions it was measured under.
Canned vs pouch vs tablet vs bottle: which delivers the most hydrogen?
Short answer: the source that makes hydrogen closest to the moment you drink usually wins. Here is how the common formats compare on the factors that decide what reaches your glass.
| Format | How hydrogen gets in | Hydrogen number on label? | Freshness at first sip | Best for |
|---|---|---|---|---|
| Canned hydrogen water (incl. sparkling) | Added at the factory, sometimes with magnesium | Often not stated | Weeks or months after filling | Trying the taste, grab-and-go |
| Aluminum pouch | Added at the factory, sealed | Varies by brand | After shipping and storage | Travel, gym bag |
| Magnesium tablet | Magnesium reacts in your glass | Varies with tablet and water | Fresh, but you wait for it to dissolve | Occasional use |
| Portable hydrogen water bottle (PEM) | Electrolysis through a membrane | H2CAP Plus: up to 1,500 ppb per cycle (manufacturer test) | Minutes old | Daily use at work, gym or travel |
| Home water ionizer | Filtration, then electrolysis at the tap | Ionizers often make 0.2 to 1.2 mg/L (LeBaron 2022) | Straight from the tap | Whole household, cooking and drinking |
Bottom line: cans and pouches trade freshness for convenience. Bottles and home systems trade a one-time purchase for fresh hydrogen water every time, with no stack of empty cans.
What does the research say about drinking hydrogen water?
Interest started with a 2007 paper in Nature Medicine. In cell cultures and rat models, hydrogen selectively reduced the hydroxyl radical, one of the most reactive oxygen species (Ohsawa et al., 2007). These were lab and animal findings, not human results.
Human studies followed. They are mostly small, and results vary by group and outcome. The 2020 trial in the study box above is one well-designed example. You can browse more in our hydrogen water studies roundup and our plain-English guide to molecular hydrogen benefits.
A companion 2022 review adds a practical warning for every format. Hydrogen levels can fall well below what studies used, so the authors advise measuring concentration rather than assuming it (LeBaron et al., 2022, Review II).
What about regulation? In the US, hydrogen water is sold as a beverage. It is not FDA-approved to treat any disease. In 2022 the FDA sent a warning letter to a hydrogen beverage maker over unapproved drug claims (FDA, 2022). In Korea and Japan, by contrast, alkaline ionized water devices are regulated as home medical devices. Our ALPHA line holds Korean MFDS medical device approval.
How do you choose a good hydrogen water source?
Whether you buy canned hydrogen water or make your own, the same checks apply. Use this five-step label checklist in the store or online.
- Find the hydrogen number. Look for a stated concentration in ppm, ppb or mg/L. No number means you cannot compare.
- Check the test conditions. A good label says when and how the number was measured, such as at filling or at opening.
- Check the date. Fresher stock has had less time to lose hydrogen through seals and packaging.
- Read the claims. Skip products that promise to cure or treat disease. That is a red flag in the US.
- Drink it fast. Open, pour gently and drink within minutes. Or make it fresh right before you drink.
If you plan to drink hydrogen water daily, a reusable option usually makes more sense. The H2CAP Plus hydrogen water bottle uses a PEM membrane and platinum-titanium (Pt/Ti) electrodes. It makes up to 1,500 ppb in about 3.5 minutes, tested in purified tap water. It runs on USB-C power and has no built-in battery.
For a whole household, consider the Alpha 1700 water ionizer. It filters water through two cartridges: an ALPHA UF membrane and an ALPHA EM CARBON filter. It then runs the water through its Optimized 7 SMART Plate electrolysis cell. Not sure how hydrogen water differs from alkaline water? Read hydrogen water vs alkaline water.
Canned hydrogen water FAQ
Does canned hydrogen water actually contain hydrogen?
It can, while the container is sealed. Hydrogen is a tiny gas molecule that leaves water easily. The amount in your glass depends on packaging, storage time and how fast you drink after opening. Many cans do not print the hydrogen level you get at the first sip.
How long does hydrogen stay in water after you open it?
Not long. Once a can or bottle is open, dissolved hydrogen starts escaping into the air. Pour gently, keep the lid on when you can, and drink within minutes rather than hours for the most hydrogen.
Is hydrogen sparkling water the same as hydrogen water?
Not exactly. Hydrogen water is any water with dissolved molecular hydrogen (H2). Hydrogen sparkling water adds fizz and flavor on top. The bubbles you see are mostly carbonation, not hydrogen, so fizz tells you nothing about the hydrogen level.
Is canned hydrogen water better than a hydrogen water bottle?
Cans win on convenience for a one-off try. A hydrogen water bottle wins on freshness and cost over time. It makes hydrogen water minutes before you drink, and you can repeat the cycle all day.
How much hydrogen should good hydrogen water have?
At room temperature and normal pressure, water can hold about 1.6 mg/L (1,600 ppb) of hydrogen. A 2020 randomized trial in healthy adults used water at about 0.75 mg/L. Look for a brand that states its tested concentration and the test conditions.
Is hydrogen water safe to drink every day?
Hydrogen water is sold as an ordinary beverage in the US, Japan and Korea. Your own gut bacteria also make hydrogen gas naturally. If you have a medical condition or take medication, talk with your physician before changing your drinking routine.
Is hydrogen water FDA approved?
In the US, hydrogen water is sold as a beverage, not as an FDA-approved treatment for any disease. The FDA has warned at least one hydrogen beverage company about disease claims. Treat any product that promises to cure illness with caution.
